Wacky Cake

So for anybody that doesn't already know, due to Orion's allergies, I am currently not allowed to have any milk or milk products, eggs, peanuts, tree nuts, coconuts or sesame seeds. I've very jokingly referred to this as the "meat and wheat" diet. It's really not all that horrible, but the 2 things I've been craving most (especially with my red) are cheese and chocolate. Dear God, how I miss parmesan and dark chocolate [insert sigh here]. However, with much MUCH thanks to an awesome Mother-in-Law, I can now have chocolate cake! It is unbelieveably moist and has no eggs or milk - allow me to introduce and share with you "Wacky Cake".

Here's the quick and easy recipe to try it for yourself!


  • 3 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 6 tablespoons cocoa (I used Hershey's Special Dark)
  • 1 teaspoon salt
  • 10 tablespoons oil
  • 2 teaspoons vanilla
  • 2 tablespoons vinegar
  • 2 cups water

Method: Preheat oven to 350. Mix all dry ingredients together and spoon out three holes. Mix vanilla, vinegar and oil together and pour mixture into the holes. Pour in water and mix well. In a greased pan, bake at 350 for 30 minutes. As a side note, I did two 9" rounds and they couldn't have turned out better!

And because of the awesome nature of this cake, Orion was able to finally have cake (and batter) for the first time! Choclate cake is a smash!
